12 Minute Tacos

12 minute tacos*

1.       Toss boneless skinless chicken breasts in olive oil, cumin, salt, pepper, and a dash of cayenne pepper
2.       Grill chicken on the foreman grill
3.       Once chicken is grilling, start cooking instant Spanish rice in 1 pot, and refried beans in another.
4.       While those 3 things are all cooking, cut up your toppings, tomatoes, lettuce,cheese, etc.
5.       When the chicken is done, chop it up into small pieces, and add salsa & stir to coat chicken (Pace chunky seems to work best)
6.       Heat / brown tortillas
7.       By now everything should be done cooking, remove from heat and serve!

*Chicken can be changed to steak or shrimp for this recipe. As a vegetarian option, you can use hearty / savory mushrooms like Baby Bella, Porchini, or Portabello as a meat substitute. 

If you do not have a foreman grill, slice the chicken into 1 inch medallions and pan saute.
